You can pick the cone directly from the tree, place it in a burlap bag, lay it out in the sun for approximately three weeks to allow it to dry up to begin to extract the pinenut / pinon from the cone. You can hit the bag around on the ground and nuts will spring out of the cone from within the bag. You can empty the bag in a small tub or in a container and seperate the nuts and enjoy them.
